Weekend Delight: How to prepare Isapa soup

Isapa soup is common in Southwest Nigeria especially Ekiti state. It is eaten mostly during festive periods. Making it can be a bit stressful but at the end of its preparation, it is very delicious and will make your day.

Ingredients for Isapa soup
1. Isapa

2. Melon

3. Tomatoes, rodo (red pepper), onions

4. Stockfish, crayfish

5. Locust beans (iru)

6. Seasoning, salt

7. Red palm oil

8. Meat or beef as desired.

Before cooking:

· Blend the tomatoes, rodo, and onions together and you can also blend some locust beans with it and crayfish. After blending pour into a bowl and keep aside.

· Wash your melon and blend; don’t add too much water so it can fry well. After blending, pour into another bowl and rinse the blender. Keep the water from the blender separate.

· Boil the meats together and keep the stock from it.

· Put your frying pan on fire; add some red palm oil to the frying pan. After the oil is hot, put your blended egusi bit by bit for it to fry in balls.

How to cook:

Put your cooking pot on fire; add some quantity of red palm oil. After the oil is hot, pour the blended pepper, tomatoes, and onions and cook for about 15 minutes. After, add the water from the blended egusi, add the stock, add locust beans, add crayfish and the meats, put salt and seasoning as you desire and cover the pot until the oil begins to surface.

Pour Isapa into the pot, stir very well and add your fried Egusi. allow to cook for some minutes and your soup is ready.

You can enjoy the delicacy with pounded yam or white rice as you desire
